Roast Turkey

Ingredients:

  • 1 whole turkey (10-12 lbs)
  • 1/2 cup olive oil or melted butter
  • Salt and pepper to taste
  • 4 cloves garlic, smashed
  • 1 onion, quartered
  • Fresh herbs like thyme, rosemary, and sage
  • 1 lemon, halved
  • 2 cups chicken broth


Preparation

  1. Preheat the oven to 325°F (165°C).
  2. Remove the turkey giblets and pat the turkey dry with paper towels.
  3. Rub the turkey with olive oil or melted butter, then season with salt, pepper, garlic, and fresh herbs.
  4. Stuff the turkey with aromatics such as onion, garlic, and lemon.
  5. Tie the legs with kitchen twine and tuck the wings underneath.
  6. Place the turkey in a roasting pan, breast-side up, and pour the chicken broth around the base.
  7. Cover loosely with foil and roast for 15 minutes per pound, basting occasionally with its own juices.
  8. Remove from the oven, cover with foil, and let rest for 20-30 minutes before carving.
