Sweet Potato Casserole

Ingredients:

  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 cup mini marshmallows (or chopped pecans for topping)



Preparation:

  1. Preheat the oven to 350°F (175°C).
  2. Boil the sweet potatoes in salted water for 15-20 minutes, or until tender.
  3. Drain the potatoes and mash them with butter, brown sugar, cinnamon, and vanilla extract.
  4. Transfer the mashed sweet potatoes to a greased baking dish.
  5. Top with marshmallows (or chopped pecans) and bake for 20-25 minutes, or until the marshmallows are golden brown.
