Sweet Potato Casserole
Ingredients:
- 4 large sweet potatoes, peeled and cubed
- 1/2 cup butter
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 cup mini marshmallows (or chopped pecans for topping)
Preparation:
- Preheat the oven to 350°F (175°C).
- Boil the sweet potatoes in salted water for 15-20 minutes, or until tender.
- Drain the potatoes and mash them with butter, brown sugar, cinnamon, and vanilla extract.
- Transfer the mashed sweet potatoes to a greased baking dish.
- Top with marshmallows (or chopped pecans) and bake for 20-25 minutes, or until the marshmallows are golden brown.
